Barra thrive in our Tropical climate so we are able to achieve a healthy growth rate which involves constant water quality monitoring there by dramaticaly reducing any form of stress to our barra.

Finishing Period
14 Days before Harvest we take out and we finish in salt enhanced ground water.
If they want orders, we need 14 days NOTICE. This is what brings our Fish to the Premium.
In that 14 days, fish is not fed. Purging period for the fish allows fish to get rid of any impurities,
resitude from feeding (they diet resitude). That is the key!
Processing
Processing is done within hours of harvest and straight into the cold rooms. For most part we processed and packaged(into bags) and delivred by refrigerated transport on the same day.
